Soup
Bean & Smoked Bacon Soup
This all-time cool-weather favorite is better than ever when you make it with Nueske Applewood Smoked Bacon.

Prep Time: 10 minutes
Cook Time: 50 minutes
Serves: 10-12

  • 1 pound Nueske Smoked Bacon, diced
  • 1-48 ounce jar Great Northern beans
  • 1-14 ounce can tomatoes, diced
  • 1½ cups onion chopped
  • 1½ cups celery, sliced thin
  • 4 chicken flavor bouillon cubes (or 4 teaspoons chicken stock)
  • 9 cups water
  • 1 bay leaf
  • 1/8 teaspoon ground cloves
  • ¼ teaspoon pepper
  • Salt to taste
In 8-quart soup pot over medium heat, cook bacon pieces until slightly crispy, stirring occasionally. Spoon off all but 4 tablespoons bacon grease. In same pan, cook celery and onions about 3 minutes, stirring constantly. Pour beans into pan, add water, bouillon or stock, bay leaf, pepper, cloves and tomatoes. Bring to boil, reduce heat to low, simmer 30 minutes. Serve hot. Discard bay leaf before serving.

Note: 1½-cups diced Nueske Smoked Ham may be substituted for bacon.
Soup
Cheesy Bacon Potato Soup
Ideal as an appetizer, hearty enough for a main course, this tasty soup is an enticing combination of everyone’s favorite flavors.

Prep Time: 25 minutes
Cook Time: 22 minutes
Serves: 8-10

  • 8 strips Nueske Smoked Bacon,
  • diced, fried and drained
  • 5 cups potatoes, diced into ½-inch cubes
  • 1½ cups celery, diced
  • 1½ cups carrots, diced
  • 1 cup onions, diced
  • 1½ teaspoons salt
  • 1-12 ounce can evaporated milk
  • 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
  • 1 cup milk (whole or half & half)
  • 2 cups Velveeta® cheese (½ brick), cubed
  • Pepper to taste
Combine potatoes, celery, carrots and onions in large saucepan. Add salt and enough water to cover vegetables. Boil gently for 20 minutes (or until vegetables are tender). Slightly mash some (but not all) vegetables. Add remaining ingredients and heat until bubbly. Serve hot.

Note: 2 cups diced Nueske Smoked Ham may be substituted for bacon.

Appetizer
Smoked Bacon Shrimp Kabobs
Fresh pineapple, shrimp and Nueske’s Applewood Smoked Bacon combine for this uniquely delicious appetizer.

Prep Time: 35 minutes
Cook Time: 8 minutes
Serves: 6

  • 4 slices Nueske Smoked Bacon, cut into thirds (lengthwise)
  • 12 large shrimp, cooked
  • 12 fresh pineapple chunks, 1-inch cubes
Wrap shrimp (from back to front, then around) with 1/3 of uncooked bacon slice; lay flat on medium-high heat griddle. Cook, turning occasionally until bacon is brown (but not crisp). Lay pineapple chunks on griddle for 2½ minutes, turn once, and grill another 2½ minutes. With toothpick, skewer cubes of pineapple, then bacon/shrimp combinations. Place finished shrimp kabobs on plate and serve immediately.

Appetizer
Tomato & Smoked Bacon Bites
Juicy cherry tomatoes filled with Nueske Smoked Bacon and Parmesan cheese are sure-fire taste delights.

Prep Time: 30 minutes
Serves: 4-6

  • 8 slices Nueske Smoked Bacon, diced in ¼-inch pieces, fried and drained
  • 16-20 cherry tomatoes
  • ½ cup Miracle Whip® dressing
  • 1/3 cup green onions, sliced
  • 3 tablespoons Parmesan cheese, grated
  • 2 tablespoons fresh parsley, snipped (or 1 tablespoon dried)
Cut a thin slice off each tomato top. Scoop out pulp and discard (or use in another recipe). In small bowl, combine all remaining ingredients; mix well. Spoon mixture into hollow tomatoes, arrange on plate and serve.

Salad
German-style Potato Salad
An authentic German-style Potato Salad that’ll have your family and guests coming back for seconds.

Prep Time: 45 minutes
Serves: 8-10

  • 8 slices Nueske Smoked Bacon, diced
  • 8 medium-sized red potatoes
  • ½ cup celery, diced
  • 2 hard-boiled eggs, sliced
  • ¾ cup onion, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 cup sugar
  • ½ cup cider vinegar
  • ½ cup cold water
  • 2 fresh eggs, well beaten
  • ½ teaspoon dry mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Boil potatoes in skins until done; peel and dice. Add celery, boiled eggs, onion and parsley. Set aside. Fry bacon in heavy fry pan; drain all but 3-4 tablespoons of bacon fat. Add sugar, vinegar, water, eggs, mustard, salt and pepper. Simmer about 10 minutes or until mixture thickens. Remove from heat and immediately pour bacon mixture over potatoes. Mix lightly. Serve warm.

Salad
Smoked Bacon & Chicken Cobb Salad
Impress your family and friends with this easy-to-make Cobb salad and out-of-this-world dressing.

Prep Time: 25 minutes
Serves: 4-6

  • 1 pound Nueske Smoked Bacon, diced, fried and drained
  • 1 pound Nueske Smoked Chicken Breast, skinned, in ½-inch cubes
  • 1 large head red leaf lettuce, shredded
  • Dice in ¼-inch cubes: 1 large tomato, 1 red bell pepper, 1 green bell pepper
  • ¼ pound blue cheese, crumbled (about 1 cup)
Dressing:
  • 2/3 cup extra virgin olive oil
  • 3 tablespoons balsamic or red wine vinegar
  • 1 teaspoon sugar
  • 1/8 teaspoon salt
  • Pepper to taste
Whisk dressing ingredients together in small bowl. In large bowl, toss shredded lettuce with dressing mixture. Divide lettuce onto 4 or 6 plates.

Arrange (in this order): chicken, green and red peppers, bacon pieces, cheese and tomatoes in strips across lettuce and serve.

Main Dish
Maple-glazed Canadian Bacon
Light and tender smoked Canadian bacon becomes the “star” of your meal when highlighted with a sweet maple glaze.

Prep Time: 3 minutes
Cook Time: 5 minutes
Serves: 4-6

  • 8 ounces Nueske Smoked Canadian Bacon, sliced
  • 3 tablespoons pure maple syrup
  • 1 tablespoon light brown sugar
  • 2½ teaspoons Dijon mustard
  • 1 teaspoon fresh lemon juice
  • Pinch of salt
In a 10-inch skillet, warm syrup, sugar, mustard, lemon juice and salt over medium heat; stir until mixed. When hot, place bacon slices in pan and gently shake pan until slices are coated. Remove from heat. Transfer bacon to serving platter and brush on additional glaze. Serve immediately.

Main Dish
Sweet & Sour Red Cabbage with Smoked Bacon
A European-style main dish that’s easy enough to prepare for your family... impressive enough to serve to guests.

Prep Time: 10 minutes
Cook Time: 1 hour, 10 minutes
Serves: 6-8

  • 8 slices Nueske Smoked Bacon, diced
  • 1-2 pound head red cabbage, shredded
  • 1 apple, diced
  • 4 tablespoons water
  • 4 tablespoons sugar
  • 8 tablespoons red wine vinegar
  • 2 teaspoons salt
  • Pepper to taste
Fry bacon in heavy frying pan until crisp; add cabbage, apple and water. Cover and steam slowly for 1 hour; stir often to prevent burning. Add sugar, salt, pepper and vinegar. Stir well. Serve warm.
Side Dish
Tri-Color Peppers with Smoked Bacon
A colorful side dish of green, red and yellow peppers with the famous Applewood smoked flavor of Nueske Bacon.

Prep Time: 15 minutes
Cook Time: 20 minutes
Serves: 6

  • 5 slices Nueske Smoked Bacon, diced
  • 2 green peppers, cut into ¼-inch strips
  • 1 red pepper, cut into ¼-inch strips
  • 1 yellow pepper, cut into ¼-inch strips
  • 1 small onion, chopped (about ¼ cup)
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seed
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup sour cream
  • Fresh cilantro, snipped
Fry bacon until crisp, remove from pan and drain. Reserve 2 tablespoons of bacon fat in pan. Add colored peppers and onion, frying over medium high heat for 2 minutes. Add diced bacon and remaining ingredients, except sour cream and cilantro. Heat to boiling; reduce heat and simmer uncovered for 5 minutes. Remove from heat, stir in sour cream, sprinkle with cilantro. Serve warm.

Braised Cabbage with Smoked Bacon
The perfect side dish for your favorite pork entrée. Complements the flavor of pork roast, chops, Canadian bacon.

Prep Time: 15 minutes
Cook Time: 10 minutes
Serves: 6-8

  • 3 slices Nueske Smoked Bacon, diced, fried and drained
  • 2 teaspoons garlic, minced
  • 2 small leeks, tough green leaves removed (about 1 cup)
  • 1 large head Savoy cabbage, core removed
  • 1 cup low-salt chicken broth
  • 15-ounce can Great Northern beans, rinsed and drained
  • 1 tablespoon each: finely julienned fresh sage, snipped chives
  • Fresh ground pepper to taste
Rinse, split and thinly slice leeks. Remove core and thinly slice cabbage (about 6 cups). Julienne sage and snip chives. Fry bacon in 12-inch skillet over medium high heat until crisp (about 3 minutes); set bacon aside on paper towels. Reserve 2 tablespoons of bacon fat. Add garlic and leeks to skillet; cook about 2 minutes. Add cabbage, chicken stock and beans; gently toss until combined. Simmer until cabbage begins to wilt (about 3 minutes). Add bacon, sage and chives. Toss until well combined. Season to taste. Serve hot.
