Defrost thoroughly under refrigeration. Can be grilled, broiled, baked, or prepared in the same manner as fine beef. Buffalo is best when enjoyed rare or medium rare. 140º internal temperature is recommended for rare. We suggest the use of a meat thermometer as buffalo cooks faster than beef because of the low fat nature of the meat.
