Makes: Serves 6-8
Ingredients
- 1 can (8 oz.) water chestnuts, sliced in thin strips
- 1 1/2 C. Nueske's Smoked Turkey, cubed 1/2 inch
- 1/2 C. pitted black olives
- 1 C. red bell pepper, diced
- 4 C. (1/2 head) Romaine lettuce, torn in pieces
- 2 Tbsp. green onion, chopped
- Dressing
- 1/2 C. vegetable oil
- 3 Tbsp. wine or cider vinegar
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. soy sauce
- 3 eggs, hard boiled and then peeled and quartered lengthwise
- 1/4 C. slivered almonds
Directions
Combine dressing with water chestnuts, smoked turkey, olives and bell pepper. Refrigerate for 2 hours or more.
When ready to serve, toss water chestnut/turkey mixture with the lettuce mixture. Garnish with the eggs and slivered almonds.
