Soup
Wild Rice & Smoked Turkey Soup
Here's a taste-tempting way to make the most of your turkey dinner leftovers, and impress your guests.

Prep Time: 45 minutes
Serves: 6-8

  • 2 cups Nueske Smoked Turkey, diced into ½-inch cubes
  • 2 cups wild rice, cooked
  • 4 cups chicken broth
  • 2 cups half & half
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • ¾ cup onion, chopped
  • ½ cup butter
  • ½ cup flour
  • 1 teaspoon parsley flakes, dried
  • ½ teaspoon salt
  • ¼ teaspoon pepper
In heavy sauce pan, saute onion, celery and carrots in butter until onion is transparent. Reduce heat; blend in flour and cook until bubbly. Gradually add broth, stirring constantly. Bring to boil; boil for 1 minute. Reduce heat; add wild rice, half & half, smoked turkey, parsley, salt and pepper. Simmer for 20 minutes.

Cheesy Smoked Turkey Chowder
Enjoy this great chowder as a dinner-starter, or meal-in-a-bowl with a garden salad and fresh bread.

Prep Time: 30 minutes
Serves: 4-6

  • 2 cups Nueske Smoked Turkey, diced into ½-inch cubes
  • 2 cups cheddar cheese, shredded (1-8 ounce package)
  • 2 cups potatoes, peeled and diced in ½-inch cubes
  • 3 cups chicken broth or stock
  • 2 cups milk
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • ½ onion, diced
  • ¼ cup butter
  • 1/3 cup flour
  • 1½ teaspoon salt
  • ¼ teaspoon pepper
In large sauce pan, bring broth to boil. Add potatoes, carrots, celery, onion, salt and pepper. Reduce heat; cover and simmer for about 15 minutes. Meanwhile, melt butter in separate sauce pan and stir in flour. Gradually add milk, stirring continuously. Cook over low heat until slightly thickened. Stir in cheese until just melted; add milk mixture to broth mixture. Add smoked turkey. Heat through and serve immediately.

Smoked Turkey Spread
Make this zesty smoked turkey & horseradish spread for a delightful change of pace.

Prep Time: 15 minutes
Serves: 8-10

  • 1½ pounds Nueske Smoked Turkey (skin removed), chopped in blender
  • 8 ounces cream cheese, softened
  • 6 tablespoons cranberry chutney
  • 3 tablespoons mayonnaise
  • 1 tablespoon horseradish
  • 1 tablespoon dried parsley leaves
  • Carr'sTM white table crackers
  • Additional cranberry chutney to use as a garnish
Mix all ingredients together; spread on Carr's® Table Waiter® Crackers (recommended). Top with ½ teaspoon of cranberry chutney and serve.

Appetizer
Smoked Turkey Kabobs
Nueske's Smoked Turkey, pineapple and cherry tomatoes make this a come-back-for-more appetizer.

Prep Time: 30 minutes
Serves: 4

  • 1½ pounds Nueske Smoked Turkey, diced into ½-inch cubes
  • 16 pineapple chunks (fresh or canned), diced into 1-inch cubes
  • 16 cherry tomatoes
  • 1 cup brown sugar
  • ½ cup honey
  • ½ cup orange juice
  • ½ cup pineapple juice
Combine brown sugar, honey, orange and pineapple juices; mix well and set aside. Alternate smoked turkey, pineapple, olives and cherry tomatoes on skewers. Broil 5 inches from heat for 7-10 minutes, turning often. Baste liberally with honey mixture after each turn.

Note: Nueske Smoked Ham may be substituted for smoked turkey.

Salad
Waldorf Salad with Smoked Turkey
Nueske Applewood Smoked Turkey, sweet & sour dressing add a snappy new personality to this all-time favorite salad.

Prep Time: 20 minutes
Serves: 4-6

  • 1 cup Nueske Smoked Turkey, diced into ½-inch cubes
  • ½ large head iceberg lettuce, cored and cut into ½-inch pieces (about 4 cups)
  • ¼ cup each: Walnut pieces and raisins
  • 1 Granny Smith apple, cored, halved, diced into ½-inch cubes
  • 2/3 cup cup red bell pepper, diced in ½-inch pieces
Dressing
  • 3 tablespoons each: Lemon juice, honey, distilled vinegar and parsley (minced)
  • 3 tablespoons vegetable oil (canola oil)
  • 1 tablespoon Dijon-style mustard
  • ½ teaspoon salt
  • Fresh ground pepper to taste
For salad: Combine turkey, lettuce, apple, walnuts, raisins and red pepper in 3-quart bowl. For dressing: Combine ingredients in small dish; pour over salad. Toss until well mixed. Let stand 10 minutes before serving.

Smoked Turkey & Grapes Salad
Here's a salad so fresh and delicious you'll look forward to turkey leftovers just so you can make it.

Prep Time: 20 minutes
Serves: 6-8

  • 2 cups Nueske Smoked Turkey, diced into ½-inch cubes
  • 2 cups whole seedless green grapes
  • 2 cups whole seedless red grapes
  • 1 cup cheddar or Colby cheese, diced into ½-inch cubes
  • 1½ cups celery, chopped
  • 1 cup Hellman's® mayonnaise
  • ½ cup cashew nuts
  • Lettuce leaves
Gently mix turkey, grapes, celery, cheese and mayonnaise. Line salad bowl with lettuce leaves; mound salad in center. Garnish with cashews and serve.

Note: Nueske Smoked Ham or Chicken may be substituted for smoked turkey.

Main Dish
Smoked Chicken with Fusilla Pasta
Nueske Applewood Smoked Chicken and corkscrew pasta combine for this delicious entree with an Italian flair.

Prep Time: 30 minutes
Serves: 4-6

  • 1 Nueske Smoked Chicken Breast, skinned and diced into ½-inch cubes
  • 8 ounces Fusilla (corkscrew) pasta
  • 1 cup packed baby spinach leaves, stems trimmed
  • 1 medium tomato, seeded, cut into ½-inch dice (about 2/3 cup)
  • ½ to 1½ cloves minced fresh garlic (to taste)
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons each: Olive oil and fresh basil leaves (coarsely chopped)
  • 1/8 teaspoon red pepper flakes
  • Salt to taste
  • Parmesan cheese, grated
Bring large pot of salted water to boil. Add pasta and cook according to package directions. Put olive oil, basil, garlic and spinach leaves (torn in half, if large) in large, shallow pasta dish; toss until mixed. Drain cooked pasta, retaining ½ cup pasta cooking liquid. Immediately add pasta to olive oil mixture; toss well. Add reserved pasta cooking liquid toss well again. Add smoked chicken, tomato, vinegar and red pepper flakes; toss until well mixed. Add salt to taste. Serve hot, passing grated Parmesan cheese separately.

Note: Diced Nueske Smoked Turkey may be substituted for chicken.

Main Dish
Creamed Smoked Turkey over Toast
A tasty, healthful alternative to chipped beef, this smoked turkey dish will be a hit with your whole family.

Prep Time: 15 minutes
Serves: 6-8

  • 4 cups Nueske Smoked Turkey, diced into ¼ to ½-inch cubes
  • 1½ cups peas, frozen
  • 1 cup half & half
  • 2 cups milk
  • 6 tablespoons butter
  • 6 tablespoons flour
  • ½ teaspoon salt
  • ½ to 3/4 teaspoon pepper
  • 8 slices warm toast
Place peas in colander, run under hot tap water until thawed. In 10-inch skillet over medium low heat, melt butter. Stir in flour with fork or whisk until blended. Gradually stir in milk and half & half; simmer until thickened. Add turkey, peas, salt and pepper. Heat just to boiling. Serve immediately over warm toast.
Side Dish
Rice & Peas with Smoked Turkey
Serve this delectable side dish with roasted chicken, turkey or any barbecued meat. You'll get raves!

Prep Time: 30 minutes
Serves: 8-10

  • 1 cup Nueske Smoked Turkey, diced into ½ to ¼-inch cubes
  • 1-10 ounce package green peas, frozen
  • 1 small onion, chopped (about ¼ cup)
  • 2 tablespoons butter or margarine
  • 2 cups water
  • 1 cup uncooked rice (regular)
  • 2 teaspoon chicken bouillon
  • ¼ teaspoon salt
  • ¼ cup Parmesan cheese, grated
In 2-quart sauce pan, cook and stir onion in butter (or margarine) until tender. Stir in remaining ingredients, except cheese and frozen peas. Heat to boiling stirring once or twice. Reduce heat to low, cover and simmer 15 minutes (do not lift cover while heating); remove from heat. While rice is cooking, place frozen peas in colander and run under hot water to soften and separate. When rice is cooked, fluff with fork, cover again and let stand for 5 minutes. Stir in peas, cover again for 5 minutes; then lightly stir in Parmesan cheese with fork.

Note: Nueske Smoked Ham may be substituted for turkey.
Side Dish
Smoked Turkey with Vegetable Pasta
A fresh, light side dish that's a perfect complement to your lighter Spring & Summer meals.

Prep Time: 20 minutes
Serves: 6-8

  • 3 cups Nueske Smoked Turkey, cut into julienne strips
  • 1½ cups medium shell macaroni, cooked tender and drained
  • 1 cup celery, chopped
  • ½ cup Miracle Whip® salad dressing
  • ¼ cup sour cream
  • ¾ cup cherry tomatoes, sliced into thirds
  • ¾ cup zucchini, julienne strips
  • ¾ cup red bell pepper, julienne strips
  • ¾ cup carrots, julienne strips
  • ¾ teaspoon dill weed
  • ¾ teaspoon garlic salt
In a large bowl, mix salad dressing, sour cream, dill weed and garlic salt. Add remaining ingredients; mix lightly. Refrigerate at least 30 minutes; serve well chilled.
