Better than memory

50-odd years ago, when I was a child, my family was given 2 smoked pheasants for Christmas. I have been haunted by memories of the rich smoky taste. Nueske's was the first pheasant I've had (of many attempts) that exactly captured that subtle flavor. (The trimmings also make a most spectacular yellow-pea soup!)

Great bird

This was a great bird and the price is right. In the past I have had to cure and smoke my own birds when I wanted smoked pheasant. The raw bird was about the same price as the Nueske smoked bird. And the Nueske smoked pheasant turned our moister than my home smoked birds. It was a bit salty but simmering the pheasant before serving proved to be a good idea. I have found that true of many cured and smoked items. This was a great items and I would order it again.
