This is my second order of smoked whole pheasant. I ordered 4 and they were all excellent. I had a french country side dinner party and the pheasant was a great hit. Not many of my friends prepare pheasant, and I have one recommendation. Most cured and smoked meat can be salty, this would include Neuske's pheasant. Before serving simmer the pheasant for about half an hour. This will warm the pheasant and reduce the salt. The pheasant is very tender and flavorful. I will buy again.
