Obviously high quality stuff. I just can't take the super intense smoke. Made two BIG BLT's. Ate every bite, but they didn't sit well in my stomach. Next day was still burping smoke aftertaste. Fridge smelled like smoke from the remaining product, so I tossed it. I bought bacon from here a couple years ago, and remember not finishing it all, due to the same reason - too smoky. I had given some of that order to my brother, thick cut apple wood and I can't remember what else sent his way. He smokes his own salmon, steelhead, and ribs less often than the fish - starts ribs low and slow in the smoker and finishes them low and slow in the oven. He thought the bacon was absolutely delicious.
