We not only use this for breakfast, but it's great if you make what we call in the UK Bubble & Squeak. In a frying pan, break up the corned beef hash and fry it until it gets crispy, then add frozen brussels sprouts, or whatever veggie you like, add chopped potatoes, julianne carrots, onions and garlic and keep frying until it all cooks down, and is crispy. You'll love this.
