The taste and texture are better than anything over the counter. To cut down on the fat, I heated the corned beef hash like a meatloaf. I used a pan with has a removable screen near the bottom, so excess fat dripped into the pan bottom. There really isn't a lot a person can do about the high sodium content. I serve smaller portions, then use the leftovers with shredded cabbage and carrots, sliced potatoes, and onions in a casserole.
