Ingredients
- 18 slices Nueske’s Bacon, preferably thin-sliced
- 6 sugar ice cream cones
- Aluminum foil
- Vegetable cooking spray
- 8-10 eggs for the filling
Method
- Preheat oven to 375°F. Line a baking sheet with aluminum foil.
- Wrap each sugar cone completely with aluminum foil. Lightly spray the foil-covered cones with vegetable cooking spray.
- Using about 3 slices of bacon per cone, begin at the pointed end and wrap the bacon around the cone, slightly overlapping the slices as you work toward the top. Tuck the end of each bacon slice beneath the next slice to help secure it.
- Place the wrapped cones on the prepared baking sheet. Bake for 15 minutes, then carefully turn the cones over. Continue baking for approximately 10 minutes, or until the bacon is crisp. Baking time may vary depending on the thickness of the bacon.
- During the final few minutes of baking, prepare the scrambled eggs.
- Remove the bacon cones from the oven and allow them to cool slightly, just until they are comfortable to handle.
- Carefully slide the foil-covered sugar cones out from inside the bacon, leaving the bacon cone intact.
- Gently spoon the scrambled eggs into each bacon cone and serve immediately.
