Ingredients
- 10 Slices Nueske's Applewood Smoked Bacon
- 1/2 lb Pizza dough (room temperature and rolled into a 12-14” circle)
- Cornmeal (for dusting)
- 1/2 Cup Ricotta cheese
- 2 tsp Fresh chopped thyme
- Salt and pepper, to taste
- 6-8 Fresh figs, each sliced into three pieces or quarters
- 4 oz Gorgonzola cheese, crumbled
- 2 Large shallots, peeled, sliced and sautéed in a dash of olive oil until soft.
- Olive oil for drizzling on to crust
- Balsamic vinegar reduction for drizzling over finished pizza
- Micro greens or arugula
Method
- Preheat the oven to 425 degrees. Lightly dust a pizza pan, baking stone or sheet pan with corn meal. Transfer rolled pizza dough onto prepared pan.
- Cook Nueske’s bacon until almost done but not crispy and drain and sauté sliced shallots until soft.
- In a small bowl, combine ricotta cheese, salt, pepper, and fresh thyme. Spread mixture evenly over dough, leaving a 1-inch border of dough. Arrange bacon strips (can cut in half), shallots, figs and Gorgonzola cheese over ricotta spread.
- Drizzle or brush the edge of dough with olive oil and bake 12-15 minutes or until the crust is golden brown.
- Remove from oven, allow pizza to rest for a few minutes, and finish by drizzling a balsamic vinegar reduction and topping with micro greens.
- Slice and serve. Makes 1 pizza.
