Ingredients

  • 10 Slices Nueske's Applewood Smoked Bacon
  • 1 Tbsp. Olive Oil
  • 4 Cups Fresh Spinach (can substitute with kale or arugula)
  • 6 Scallions (plus extra for garnish if desired)
  • 8 Large Eggs
  • 1/2 Cup Whole Milk or Heavy Cream
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Fresh Cracked Black Pepper
  • 1 Cup Shredded Parmesan Cheese (divided into ¾ cup and ¼ cup)

Method

  1. Preheat oven to 350 degrees F.
  2. Heat a 10” enamel cast iron pan over medium heat. Add olive oil and once it is hot, add spinach and scallions.
  3. Cook, stirring occasionally until spinach and scallions are tender and any water that spinach releases has evaporated. Turn off the heat when all water is evaporated.
  4. While vegetables are cooking, whisk together eggs, milk, salt, pepper and 3/4 cup Parmesan cheese in a large mixing bowl.
  5. Stir in approximately ¾ of the chopped bacon into the egg mixture (skillet is not over heat).
  6. Pour the egg mixture into the skillet with the vegetables and gently combine ingredients with a spatula. Spinach and bacon should be evenly distributed in the pan.
  7. Sprinkle remaining bacon on top and place pan into preheated oven. Bake 17-20 minutes or until eggs are set.
  8. Allow frittata to cool for 5 minutes. Slice and serve with an extra sprinkling of chopped scallions and cheese if desired.
