Ingredients
- 10 Slices Nueske's Applewood Smoked Bacon
- 1 Tbsp. Olive Oil
- 4 Cups Fresh Spinach (can substitute with kale or arugula)
- 6 Scallions (plus extra for garnish if desired)
- 8 Large Eggs
- 1/2 Cup Whole Milk or Heavy Cream
- 1/2 tsp. Sea Salt
- 1/2 tsp. Fresh Cracked Black Pepper
- 1 Cup Shredded Parmesan Cheese (divided into ¾ cup and ¼ cup)
Method
- Preheat oven to 350 degrees F.
- Heat a 10” enamel cast iron pan over medium heat. Add olive oil and once it is hot, add spinach and scallions.
- Cook, stirring occasionally until spinach and scallions are tender and any water that spinach releases has evaporated. Turn off the heat when all water is evaporated.
- While vegetables are cooking, whisk together eggs, milk, salt, pepper and 3/4 cup Parmesan cheese in a large mixing bowl.
- Stir in approximately ¾ of the chopped bacon into the egg mixture (skillet is not over heat).
- Pour the egg mixture into the skillet with the vegetables and gently combine ingredients with a spatula. Spinach and bacon should be evenly distributed in the pan.
- Sprinkle remaining bacon on top and place pan into preheated oven. Bake 17-20 minutes or until eggs are set.
- Allow frittata to cool for 5 minutes. Slice and serve with an extra sprinkling of chopped scallions and cheese if desired.
