Bacon, Cheese and Pomegranate Pastry Wreath

Ingredients
- 6-8 Slices Nueske's Applewood Smoked Bacon
- 1 Tbsp Unsalted butter
- 1 Large leek cleaned and chopped (use white and some green part of leek about 1 ½ -2 cups)
- 1 sheet (9 oz) Frozen Puff Pastry Dough, thawed according to direction on package or homemade puff pastry.
- 6 oz Goat cheese, crumbled
- 1/4 cup Grated Parmesan Reggiano Cheese
- Fresh ground black pepper
- 1 egg yolk and 1 Tbsp water whisked together
- 1/2 cup Pomegranate arils
- 1 cup arugula leaves, micro greens, or parsley
Method
- On a lightly floured surface, roll dough into about a 14”square and then cut into a 14” circle. Transfer pastry circle to a baking sheet pan that has been sprayed with non-stick cooking spray or lined with a sheet of parchment paper. Refrigerate the dough for 15 minutes.
- Preheat oven to 400 degrees F.
- Evenly distribute leeks, goat cheese and Parmesan cheese around the outer edge leaving a 1” clean border. Sprinkle all with black pepper. Pick up the tip of one of the smaller triangles and gently pull it over the filling and press into outer edge of dough sealing it with a little water. Repeat with remaining triangles. Brush all surfaces of dough with prepared egg wash.
- Bake in preheated oven for 25 to 35 minutes or until the crust is golden brown. Remove from oven. Gently tuck pieces of Nueske’s bacon into open spaces, sprinkle with pomegranate arils and arugula.
- Slice and serve.
