Ingredients

  • 12 oz. Nueske's Applewood Smoked Bacon
  • 1/2 cup yellow onion, finely diced
  • 3 cloves minced
  • 3 Tablespoons maple syrup
  • 3 Tablespoons balsamic vinegar
  • ½ cup brown sugar
  • ¼ teaspoon black pepper
  • 2 teaspoons Worcestershire sauce
  • Salt to taste
  • 1 12-inch pre-baked pizza crust
  • Olive oil
  • ½ cup pizza sauce
  • 8 oz. ball of fresh mozzarella, cut into thin slices
  • ½ cup sliced sun-dried tomatoes
  • ½ cup prepared basil pesto sauce
  • Handful of arugula leaves

Method

  1. To prepare the Bacon Jam, place the Nueske’s Applewood Smoked Bacon pieces in a sauté pan and cook on medium heat 5-9 minutes, or until desired crispness. Drain and reserve 1 teaspoon of bacon grease. Set aside.
  2. In the same sauté pan, cook the onion in the reserved bacon grease on medium heat for 5 minutes, or until onion has softened. Add garlic and cook for 1 minute.
  3. Add remaining jam ingredients and cook over medium heat for 15 minutes, or until jam has thickened. Cool and set aside.
  4. Preheat oven to 400 degrees. To prepare the pizza crust, brush the crust with olive oil.
  5. Spread pizza sauce onto crust, then top with the mozzarella cheese and sun-dried tomatoes. Bake for 7-10 minutes, or until the cheese is bubbling and the crust is golden brown.
  6. Remove from oven and top the pizza with dollops of bacon jam, pesto sauce and arugula leaves. Slice and serve.
