Ingredients
- 12 oz. Nueske's Applewood Smoked Bacon
- 1/2 cup yellow onion, finely diced
- 3 cloves minced
- 3 Tablespoons maple syrup
- 3 Tablespoons balsamic vinegar
- ½ cup brown sugar
- ¼ teaspoon black pepper
- 2 teaspoons Worcestershire sauce
- Salt to taste
- 1 12-inch pre-baked pizza crust
- Olive oil
- ½ cup pizza sauce
- 8 oz. ball of fresh mozzarella, cut into thin slices
- ½ cup sliced sun-dried tomatoes
- ½ cup prepared basil pesto sauce
- Handful of arugula leaves
Method
- To prepare the Bacon Jam, place the Nueske’s Applewood Smoked Bacon pieces in a sauté pan and cook on medium heat 5-9 minutes, or until desired crispness. Drain and reserve 1 teaspoon of bacon grease. Set aside.
- In the same sauté pan, cook the onion in the reserved bacon grease on medium heat for 5 minutes, or until onion has softened. Add garlic and cook for 1 minute.
- Add remaining jam ingredients and cook over medium heat for 15 minutes, or until jam has thickened. Cool and set aside.
- Preheat oven to 400 degrees. To prepare the pizza crust, brush the crust with olive oil.
- Spread pizza sauce onto crust, then top with the mozzarella cheese and sun-dried tomatoes. Bake for 7-10 minutes, or until the cheese is bubbling and the crust is golden brown.
- Remove from oven and top the pizza with dollops of bacon jam, pesto sauce and arugula leaves. Slice and serve.
