Ingredients
- 10-12 Slices Nueske's Bacon, backed and cut into pieces
- 8 cups cubed bread, such as sourdough, challah, or baguette
- 1 Tbsp olive oil
- 1 small onion, chopped
- 1 large red bell pepper, seeded and diced
- 4 cups fresh baby spinach
- 10 large eggs
- 1 cup whole milk
- 1 cup half-and-half
- 1 cup shredded Parmesan cheese
- 1 cup shredded Monterey Jack cheese or white cheddar
- Freshly ground black pepper, to taste
Method
- Butter a large oval or rectangular baking dish, approximately 9 x 13 inches.
- Place the bread cubes in the baking dish and spread into an even layer.
- Heat the olive oil in a medium skillet over medium heat. Add the onion and bell pepper and sauté until softened, about 3–5 minutes. Add the spinach and continue cooking until wilted, about 2–3 minutes. Remove from heat.
- In a medium bowl, whisk together the eggs, milk, half-and-half, and freshly ground black pepper.
- Spoon the vegetable mixture over the bread and gently toss to combine. Add both cheeses and gently mix again. Evenly distribute the bacon over the mixture.
- Pour the egg mixture evenly over all the ingredients in the baking dish.
- Preheat oven to 350°F. If the strata was assembled ahead of time, remove it from the refrigerator about 20 minutes before baking.
- Loosely cover the baking dish with aluminum foil that has been sprayed with cooking spray. Bake for 20–25 minutes.
- Remove the foil and continue baking for another 20–25 minutes, or until the egg mixture is set and the top and edges are golden brown.
