Tasty and tender Applewood Smoked Turkey makes even a simple dish feel slow cooked and hearty. This is one you’ll want to make again and again.
Ingredients
- 1 Can (8 oz) water chestnuts, sliced in thin strips
- 1 1/2 Cups Nueske's Smoked Turkey, cubed 1/2 inch
- 1/2 Cup pitted black olives
- 1 Cup red bell pepper, diced
- 4 Cups (1/2 head) Romaine lettuce, torn in pieces
- 2 Tbsp green onion, chopped
- Dressing
- 1/2 Cup vegetable oil
- 3 Tbsp wine or cider vinegar
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp soy sauce
- 3 eggs hard boiled and peeled and quartered lengthwise
- 1/4 Cup slivered almonds
Method
- Combine dressing with water chestnuts, smoked turkey, olives and bell pepper.
- Refrigerate for 2 hours or more.
- When ready to serve, toss water chestnut/turkey mixture with the lettuce mixture.
- Garnish with the eggs and slivered almonds.
