Crispy bacon twists, caramelized roasted Brussels sprouts, and creamy whipped burrata come together with sweet and savory touches for a rich, crowd-pleasing spread that looks fancy but doesn’t demand a culinary degree.
Ingredients
- 1 (12oz) Pkg Nueske's Applewood Smoked Medium-Sliced Bacon
- 1 lb fresh Brussels sprouts
- 3 tbsp bacon fat or olive oil
- salt & pepper to taste
- balsamic vinegar
- maple syrup
- 8 oz Burrata, drained
- 2-3 tbsp heavy cream
- 1/2 tsp freshly ground black pepper
- 1/2 tsp salt
- 1/2 tsp fresh thyme, chopped
- Honey
Method
- Bacon Twists:
- Preheat oven to 400°F. Line a rimmed baking pan with aluminum foil and place a wire rack on top. Lightly spray the rack with nonstick cooking spray.
- Using both hands, tightly twist each slice of bacon and arrange the twists on the rack. If any begin to unwind, gently re twist them in place.
- Bake for 15 to 17 minutes. Remove from the oven and carefully turn each twist over.
- Return to the oven and continue baking for 12 to 15 minutes, or until the bacon is crisp to your liking.
- Remove from the oven and let cool slightly. Carefully transfer the twists to paper towels to drain. Do not allow them to cool completely on the rack, as they may stick.
- Serving Tips: • Bacon twists can be prepared a few hours ahead and served at room temperature or reheated in a 350°F oven just before serving. • Save the bacon drippings to roast the Brussels sprouts for added flavor.
- Roasted Brussels Sprouts:
- Preheat oven to 425°F.
- Rinse the Brussels sprouts and remove any blemished or yellow leaves. If the sprouts vary in size, halve the larger ones.
- Drizzle a roasting pan with melted fat or oil. Arrange the sprouts cut side down in a single layer. Season with salt and pepper.
- Roast for 20 to 25 minutes, or until tender and caramelized. Cooking time may vary depending on size.
- Remove from the oven and season with additional salt and pepper, if needed. Drizzle with balsamic vinegar and syrup, if desired, before serving.
- Whipped Burrata:
- In the bowl of a food processor, combine the burrata, cream, thyme, salt, and pepper.
- Process until smooth and creamy, taking care not to overmix.
- Spoon the mixture into a serving bowl and drizzle with honey just before serving.
- Finish with a sprinkle of freshly ground pepper, if desired.
- Serving Suggestions: Serve with slices of French bread, toasted or fresh, and or crackers. For a beautiful presentation, arrange the Whipped Burrata alongside Bacon Twists and Roasted Brussels Sprouts on a platter and serve.
