
Smoky Baked Potatoes

Ingredients
- 4 medium russet potatoes
- 2 Tbsp olive oil
- 1 Tsp sea salt
- One package Nueske’s Applewood Smoked and/or Cherrywood Smoked Bacon
- 1 Cup Nueske’s Honey Glazed Boneless Petite Ham cut into bite-sized cubes
- 1 Cup Nueske’s Smoked Chicken Breasts cut into bite-sized cubes
- 1 Cup sour cream
- 1 Cup shredded cheese (cheddar or blend)
- 1 Cup steamed broccoli florets
- 2 Tbsp chopped chives
- 1 Cup diced tomatoes
- ½ Cup diced onions
Method
- Preheat the oven to 425°F. Place parchment paper on a baking sheet.
- With a fork, poke some holes into the potatoes. Place onto the baking sheet, rub with olive oil, and sprinkle desired amount of sea salt on them, making sure to coat the skin.
- Bake 45-60 minutes.
- While the potatoes are baking prepare the bacon according to the desired directions on the package. Let cool and cut into bite-sized pieces.
- While the bacon is cooling and the potatoes are baking, prepare all other topping ingredients.
- When the potatoes are done they should be fork-tender and the skin crisp. Slice open each potato and fluff the insides.
- Top potatoes with desired toppings.
