Vanilla Brioche French Toast with Bacon

Vanilla Brioche French Toast with Bacon

Thick slices of brioche are soaked in a rich vanilla custard, then pan-fried in butter until golden and crisp on the outside while staying soft inside. Served with smoky Applewood bacon, a dusting of confectioner’s sugar, maple syrup, and fresh berries, this is a classic, comforting breakfast with just enough flair to feel a little fancy without trying too hard.

Method

  1. Preheat oven to 400°F. Arrange bacon slices on a foil lined baking sheet fitted with a wire rack. Bake for 15 to 20 minutes, or until crisp. Transfer to paper towels to drain.
  2. In a mixing bowl, combine the milk, eggs, sugar, vanilla, and salt. Whisk until smooth and well incorporated.
  3. Heat 1 to 2 tablespoons of butter in a skillet over medium heat. Dip four slices of bread into the egg mixture, coating both sides, then place in the skillet. Cook until golden brown on both sides, about 2 to 3 minutes per side. Transfer to a tray and keep warm. Repeat with the remaining bread.
  4. To serve, stack the cooked slices with bacon strips. Sprinkle with confectioner’s sugar and top with fresh berries, if desired.
  5. Serve with warm maple syrup.
