
Vanilla Brioche French Toast with Bacon
Thick slices of brioche are soaked in a rich vanilla custard, then pan-fried in butter until golden and crisp on the outside while staying soft inside. Ingredients
- 1 (12oz) Pkg Nueske's Applewood Smoked Medium-Sliced Bacon, cooked, drained and crumbled
- 8 slices Brioche Bread (works best if you let bread dry out overnight)
- 1 1/2 cups Milk
- 4 Large eggs
- 2 tbsp Sugar
- 1 tsp Vanilla Paste (2-Tsp Vanilla Extract)
- 1/4 tsp Salt
- Confectioner's Sugar
- Maple Syrup
- Fresh Berries or other seasonal fruit
Method
- Preheat oven to 400°F. Arrange bacon slices on a foil lined baking sheet fitted with a wire rack. Bake for 15 to 20 minutes, or until crisp. Transfer to paper towels to drain.
- In a mixing bowl, combine the milk, eggs, sugar, vanilla, and salt. Whisk until smooth and well incorporated.
- Heat 1 to 2 tablespoons of butter in a skillet over medium heat. Dip four slices of bread into the egg mixture, coating both sides, then place in the skillet. Cook until golden brown on both sides, about 2 to 3 minutes per side. Transfer to a tray and keep warm. Repeat with the remaining bread.
- To serve, stack the cooked slices with bacon strips. Sprinkle with confectioner’s sugar and top with fresh berries, if desired.
- Serve with warm maple syrup.
