Phyllo Egg Cups with Bacon

  • Makes: Serves Serves 6-8.


  • 1 pkg phyllo sheets
  • 7 eggs
  • 3 Tbsp heavy cream
  • 8 slices Nueske's Smoked Bacon, cut fine
  • 1/3 C green pepper, chopped
  • 1/3 C onion, chopped
  • dash salt
  • dash pepper


Line 10 muffin cups with phyllo sheets. Beat eggs with cream and set aside. Fry bacon to medium crisp. Add green pepper, onion, salt and pepper to bacon. Saute for 3 minutes over medium low heat. Add bacon mixture to eggs and fill phyllo cups. Bake 15 minutes at 350°. Variation: May use 1 cup diced Nueske's smoked ham in place of the bacon
