Smoked Chicken Penne Recipe

Penne Pasta with Smoked Chicken and Sun-Dried Tomatoes

  • Makes: Serves 4-6


  • 8 oz. penne pasta
  • 3 Tbsp. olive oil
  • 5 slices Nueske's Smoked Bacon, cut 1/2 in and fried medium crisp
  • 1 C. onion, chopped
  • 1/3 C. lemon juice
  • 1 Tbsp. fresh thyme, chopped
  • 1/2 C. sun-dried tomatoes, sliced julienne
  • 1 1/2 C. Nueske's Smoked Chicken , sliced julienne
  • 1/2 C. pine nuts, toasted (save half for garnish)


Cook pasta in large pan of boiling water until al dente. Drain and then keep warm. Heat oil in pan. Add bacon and onion. Fry until bacon is medium crisp and onion is tender. Add the cooked pasta, lemon juice, thyme, sun-dried tomatoes, smoked chicken, and half of the pine nuts. Heat through. Pour into serving dish and garnish with remaining pine nuts.
