Smoked Turkey and Roasted Corn Salsa

Ingredients

  • 3 cobs of corn, roasted
  • 1 Tbsp. vegetable oil
  • 1/2 C. onion, finely chopped
  • 2 small serrano chili pepper, seeded and finely chopped
  • 4 Roma tomatoes, cored and chopped
  • 1/4 C. fresh cilantro, chopped
  • 1 C. Nueske's Smoked Turkey, diced 1/4 inch
  • 2 Tbsp. lime juice

Directions

Roast cobs corn on grill after removing husks and silks. Cool and remove corn kernels from cob. Makes about 1 1/2 c. corn. Mix corn with remaining ingredients. Serve with tortilla chips.
