Bacon Bruschetta Recipe

Bacon Bruschetta

  • Makes: Serves Serves 6-8


  • 14 slices French or Italian bread, cut in 1/2 inch slices
  • 1/3 C olive oil
  • 6 Roma tomatoes, diced
  • 1 1/4 C mozzarella cheese, diced 1/4 inch
  • 5 slices Nueske's Smoked Bacon, fried crisp & crumbled
  • 1/4 tsp fresh ground pepper
  • 3 Tbsp fresh basil, chopped


Lightly brush one side of bread with olive oil. Place on ungreased baking sheet oil side up. Bake for 15 min or until lightly browned. Arrange toasts on serving tray.

In a bowl combine tomatoes, cheese, crumbled bacon, and pepper. Toss gently. Top toasts with tomato bacon mixture. Sprinkle basil on top and more black pepper if desired.
