Calico Corn Salad with Summer Sausage

Ingredients

  • 2 cans (11 oz.) shoepeg corn, drained
  • 1 can (15 oz.) black beans, drained
  • 1 C. onion, chopped
  • 1 C. celery, chopped
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 orange pepper, chopped
  • salt and pepper to taste
  • 1 Tbsp. fresh parsley, chopped
  • 2 C. Nueske's Summer Sausage, cubed 1/4 in.
  • Dressing
  • 1 C. sugar
  • 1/2 C. cider vinegar
  • 1/4 C. oil

Directions

Boil the sugar, vinegar and oil mixture in a small saucepan for 1 minute. Allow to cool. Mix all ingredients together. Cover and refrigerate.
