Apple, Asparagus, and Smoked Chicken Salad

  • Alfalfa sprouts for garnish
  • 1 C. fresh asparagus, cut in 1 inch pieces
  • 2 Tbsp. cider or red wine vinegar
  • 2Tbsp. vegetable oil
  • 2 tsp. honey
  • 2 tsp. fresh parsley, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 C. Nueske's Smoked Chicken , cubed
  • 1/2 C. red apple, diced
  • 2 C. torn mixed greens


Cook asparagus in small amount of water for about 3 minutes. Drain and run under cold water. Set aside. In separate bowl, combine the vinegar, oil, honey, parsley, salt and pepper. Fold in the smoked chicken, apple and asparagus. Arrange greens in serving bowl. Spoon smoked chicken mixture over greens. Garnish with alfalfa sprouts if desired.
