Asian Smoked Turkey Salad

Ingredients

  • 1 can (8 oz.) water chestnuts, sliced in thin strips
  • 1 1/2 C. Nueske's Smoked Turkey, cubed 1/2 inch
  • 1/2 C. pitted black olives
  • 1 C. red bell pepper, diced
  • 4 C. (1/2 head) Romaine lettuce, torn in pieces
  • 2 Tbsp. green onion, chopped
  • Dressing
  • 1/2 C. vegetable oil
  • 3 Tbsp. wine or cider vinegar
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. soy sauce
  • 3 eggs, hard boiled and then peeled and quartered lengthwise
  • 1/4 C. slivered almonds

Directions

Combine dressing with water chestnuts, smoked turkey, olives and bell pepper. Refrigerate for 2 hours or more. When ready to serve, toss water chestnut/turkey mixture with the lettuce mixture. Garnish with the eggs and slivered almonds.
