Asparagus Stir-Fried with Smoked Turkey and Mustard

  • 1 lb. asparagus
  • 2 Tbsp. olive oil
  • 1 C. red onion, sliced and quartered
  • 1/2 C. red bell pepper, thinly sliced
  • 1 clove garlic, crushed
  • 1 Tbsp. wholegrain mustard
  • 1 tsp. honey
  • 1/2 C. cream
  • 1 C. Nueske's Smoked Turkey , sliced julienne
  • 1/4 tsp. salt
  • Dash of black pepper


Cut woody ends off asparagus and then cut into 2 inch lengths. Heat oil in large pan. Add the onions, garlic and asparagus and stir fry for 3-4 minutes. Remove asparagus from pan and set aside and keep warm. Combine the mustard, honey and cream. Add to the pan and bring to a boil. Reduce heat and then return the asparagus to the pan, adding the smoked turkey, salt and pepper. Heat through and serve immediately.
