Bacon, Tomato, and Red Onion with Pesto

  • 8 slices Nueske's Smoked Bacon, diced
  • 4 large tomatoes, cut into wedges
  • 1/2 C. red onion, diced
  • 3/4 C. extra-virgin olive oil
  • 3 Tbsp. balsamic vinegar
  • 1 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1/2 C. fresh basil leaves
  • 3 cloves garlic
  • Parmesan cheese


Fry bacon to medium crisp. Set aside. Arrange tomato wedges on serving platter. Sprinkle red onion and bacon over the tomatoes. In blender or food processor, combine the olive oil, vinegar, salt, pepper, basil and garlic. Pulse until smooth. Drizzle over the tomatoes, onion and bacon. Shave a little Parmesan cheese on the top.
