Caribbean Bacon Riblets

Everything is better with bacon, and this tasty dish is certainly no exception! The sweet smoky notes Nueske’s award-winning Smoked Bacon brings to this recipe make it simply irresistible.

  • 3 lbs. pork back ribs, cut into single ribs
  • 1/4 C. packed brown sugar
  • 2 tsp. ground allspice
  • 2 tsp. fresh ground pepper
  • 1 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. cloves
  • Sauce:
  • 8 slices Nueske's Smoked Bacon, diced
  • 1 C. sweet onion, chopped
  • 2 mangos, seeded, peeled and diced
  • 1/2 C. lime juice
  • 1/2 C. honey
  • 2 Tbsp. low sodium soy sauce
  • 1 Tbsp. dijon mustard


Preheat oven to 350º. Mix spices in large plastic bag, add ribs shake to coat. Place ribs in baking pan. Cover and bake at 350º for 1 hour. Meanwhile, combine sauce ingredients Fry the bacon to medium crisp. Add onion and continue to fry for 3 minutes. Add mango, lime juice, honey, soy sauce and mustard. Pour over ribs and continue to bake for 30 minutes, covered.
