Endive Salad with Smoked Ham

  • 6 C. endive, torn in pieces
  • ¼ cup Radicchio
  • 1 C. ripe cantaloupe, julienne strips
  • 1 C. Nueske's Smoked Ham, julienne strips
  • ¼ C red onion, diced
  • Vinaigrette
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp extra-virgin olive oil
  • ½ tsp honey
  • ¼ tsp salt
  • Fresh ground pepper to taste


Mix salad ingredients together and chill. Combine vinaigrette ingredients at room temperature. To serve, pour vinaigrette over chilled salad, toss gently to coat. Serve salad on small platter or divide it among chilled salad plates. Serve immediately.
