  • 1 1/2 lb. Nueske's Kielbasa, sliced thin
  • 4 C. beef broth
  • pinch of saffron threads
  • 1 C. onion, chopped
  • 4 cloves garlic, minced
  • 1 can green chilies
  • 1 Tbsp. fresh oregano, chopped
  • 1 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • 2 Tbsp. chili powder
  • 1 tsp. salt
  • 1 tsp pepper
  • 6 oz. tomato paste
  • 2 cans (15 oz.) red kidney beans, drained


Combine all ingredients in large kettle. Bring to a boil. Reduce to simmer for 30 minutes.

Tried this after purchasing the smoked Kielbasa a year ago and it is now a regular on the menu!! It is absolutely hands down the best chilli ever. And very simple to make! PS- don't eliminate the saffron, it adds that hidden flavor!
