Green Pea and Ham Soup

Ingredients

  • 1 Tbsp. olive oil
  • 2 Tbsp. butter
  • 1/2 lb. (2 C.) Nueske's Smoked Ham, cubed 1/2 inch
  • 1/3 C. celery, finely chopped
  • 1/3 C. carrots, finely chopped
  • 1/3 C. onion, finely chopped
  • 1 lb. fresh button mushrooms, sliced
  • 1 tsp. garlic, minced
  • 4 C. chicken broth
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. fresh ground pepper
  • 1 bag (16 oz.) frozen green peas

Directions

Heat oil and butter in deep saucepan. Add ham, celery, carrots and onions. Saute about 3 minutes. Add mushrooms and continue cooking for 2 more minutes stirring constantly. Add the garlic, broth, salt, paprika and pepper. Bring to a boil. Add the peas and simmer for 10 minutes. Serve hot.
