Combine all the remaining ingredients in large bowl. Spray 9 x 5 loaf pan with cooking spray. Form into loaf in pan and bake 1 hour at 350°, or form into mini loaves and bake for 45 minutes at 350°. Let stand for 5 to 10 minutes before slicing. Garnish with parsley sprigs. Blend sour cream and mustard together until smooth and serve with Dijon mustard sauce.
