Rinse fish and pat dry. Coat an 8 X 8 pan with olive oil. Place fish fillets in pan and sprinkle with lemon juice and salt.
In separate pan, fry bacon, onions and garlic until lightly browned. Remove from heat. Toss together with bread crumbs and parsley. Top the fish with this mixture and bake at 400° for 15 minutes.
Transfer fish to dinner plates and top with chopped tomatoes.
