Italian Fish with Bacon


Everything is better with bacon, and this tasty dish is certainly no exception! The sweet smoky notes Nueske’s award-winning Smoked Bacon brings to this recipe make it simply irresistible.

  • 4 - 8 oz fillets, Haddock or Orange Roughy
  • 2 Tbsp lemon juice
  • 1/4 tsp salt
  • 1 tsp virgin olive oil
  • 8 slices Nueske's Smoked Bacon, diced
  • 1/2 C sweet onion, chopped
  • 1/2 tsp garlic, minced
  • 1 C Italian bread crumbs
  • 1/4 C fresh parsley, chopped
  • 2 plum tomatoes, chopped, seeds removed


Rinse fish and pat dry. Coat an 8 X 8 pan with olive oil. Place fish fillets in pan and sprinkle with lemon juice and salt. In separate pan, fry bacon, onions and garlic until lightly browned. Remove from heat. Toss together with bread crumbs and parsley. Top the fish with this mixture and bake at 400° for 15 minutes. Transfer fish to dinner plates and top with chopped tomatoes.
