Lentil Salad with Smoked Ham Recipe

  • 3 C. Nueske's Smoked Ham diced in ½-inch cubes
  • 1 C. lentils
  • 1 bay leaf
  • ½ green pepper, diced
  • 2½ Tbsp. balsamic or red wine vinegar
  • ¼ C olive oil
  • ¼ C. fresh parsley, chopped
  • ¼ tsp salt
  • Fresh ground pepper to taste


Pick over lentils and rinse. Cook lentils in 2-quart saucepan with bay leaf in water over medium low heat for 35 minutes. Drain. Let cool slightly and rinse in cold water.

Whisk together vinegar, salt, pepper and oil. Pour over lentils and toss together with ham, parsley and green pepper and serve.
