Place potatoes in a large saucepan and cover with water. Bring potatoes to a boil. Reduce heat and continue to boil approximately 15 minutes. Remove from heat and drain.
In separate bowl combine remaining ingredients. Cut potatoes into 1/2 inch cubes. Add potatoes to prepared mixture. Toss to coat. Cover and refrigerate for 2 hours or until chilled.
Optional: For added color sprinkle green peas on top and gently toss.
