Scalloped Corn with Ham

Ingredients

  • 8 oz cream cheese, softened
  • 2 eggs, slightly beaten
  • 1/4 C sugar
  • 1/2 pkg corn bread/muffin mix (8 oz)
  • 1 1/2 C Nueske's Smoked Ham, diced 1/4 inch
  • 1/2 C medium Cheddar cheese, shredded
  • 1/4 C onion, chopped
  • 1 can cream style corn (14 oz)
  • 1 can whole kernel sweet corn (14 oz) drained
  • 1 C milk
  • 2 Tbsp butter, melted
  • 1 tsp salt
  • dash nutmeg

Directions

In mixing bowl, blend cream cheese, eggs and sugar. Fold in remaining ingredients. Transfer to a greased 9 X 13 inch baking pan. Bake uncovered at 350° for 45 to 50 minutes.

holiday favorite

 

I made this for Thanksgiving and it was a wonderful spoon bread kind of dish. Warm, creamy, sweet and smoky! Left-over squares crisped in a frying pan drizzled with a little maple srup made a great addition to bunch this monrning. I am already putting it on the christmas menu.
