Smoked Bacon and Chicken Cobb Salad

  • 1 lb. Nueske's Smoked Bacon, diced, fried and drained
  • 1 lb. Nueske's Smoked Chicken Breast, skinned, in ½-inch cubes
  • 1 large head red leaf lettuce, shredded
  • 1 large tomato, diced in 1/4 cubes
  • 1 red bell pepper, diced in 1/4-inch cubes
  • 1 green bell pepper, rdiced in 1/4-inch cubes
  • ¼ lb blue cheese, crumbled (about 1 C)
  • Dressing:
  • 2/3 C extra virgin olive oil
  • 3 Tbsp balsamic or red wine vinegar
  • 1 tsp sugar
  • 1/8 tsp salt
  • black pepper to taste


Whisk dressing ingredients together in small bowl. In large bowl, toss shredded lettuce with dressing mixture. Divide lettuce onto 4 or 6 plates. Arrange (in this order): chicken, green and red peppers, bacon pieces, cheese and tomatoes in strips across lettuce and serve
