  • 2 1/2 C risotto rice (uncooked)
  • 4 C low sodium chicken broth
  • 3 Tbsp fresh cilantro, finely chopped
  • 2 C asparagus, cut in pieces
  • 1/2 lb Nueske's Smoked Chicken, shredded
  • 1 green onion, finely diced
  • 1/2 tsp. ground pepper
  • 2 Tbsp. red bell pepper, finely chopped
  • 4 sticks of lemon grass
  • 1 Serrano chili, finely diced and seeded


Bring 2 cups water to boil with the 4 sticks of lemon grass in it. Simmer for 10 minutes. Add remaining 2 c. broth and the rice and continue to boil for an additional 10 minutes. Then remove the lemon grass. Continue to simmer until the rice is cooked, yet firm, about 10 minutes. Add the remaining ingredients. Cook an additional 5 minutes. Serve hot.
