Smoked Ham and Onion Quiche

  • 1 C saltine cracker crumbs
  • ¼ C butter, melted
  • 2 C Vidalia onions, sliced thin
  • 2 Tbsp butter
  • ¾ C milk
  • 2 large eggs, beaten slightly
  • ¼ tsp salt
  • ½ C sharp Cheddar cheese, shredded
  • ¾ C Nueske's Smoked Ham, finely diced in ¼-inch cubes
  • Dash of pepper
  • Dash of paprika


Place cracker crumbs and melted butter in 8-inch pie plate; mix and pat to form crust. Cook onions in 2 tablespoons butter until tender (not brown). In small bowl, combine milk, eggs, salt and pepper. Mix onions and ham gently, transfer to crust. Pour egg mixture over top. Sprinkle with cheese and paprika. Bake at 350° for 30 minutes

Not so hot


Dump the cracker crumbs and use a pilsbury pie shell..less salt. Use Colby cheese rather than the sharp add diced green peppers..Mexican style. Very good.
