Smoked Turkey and Lemon Rice Casserole

  • 2 C cooked rice
  • 3 C Nueske's Smoked Turkey, diced 1/2 inch
  • 1/2 tsp salt
  • dash pepper
  • 1/2 tsp celery seed
  • 1 can chicken broth (14 oz)
  • 5 slices lemon, cut in half
  • 5 thin onion slices, cut in half
  • 1/3 C dry white wine
  • 2 Tbsp butter
  • 1 tsp paprika


Spread cooked rice in 2 quart casserole. Top with turkey. Sprinkle with seasonings. Pour broth over turkey. Arrange lemon and onion slices over casserole mixture. Cover and bake 1 hour at 350°. Uncover and add wine, dot with butter, sprinkle with paprika. Place under broiler 4 minutes or until golden brown.
