Smoked Turkey Vegetable Soup

  • 1 C colored spiral pasta, cooked
  • 1/2 C red bell pepper, chopped
  • 3 Tbsp olive oil
  • 1 tsp garlic, minced
  • 1/2 C sweet onion, chopped
  • 1/2 C celery, chopped
  • 1/2 tsp fresh oregano, chopped
  • 4 C chicken broth
  • 1 1/2 C Nueske's Smoked Turkey, diced 1/4 inch
  • 1 C carrots, sliced
  • 1 1/2 C frozen green beans
  • 1/2 C Romano cheese, grated


Cook pasta as directed on package. Drain and set aside. In large saucepan, saute pepper, garlic, onion and celery in olive oil. Add oregano, chicken broth, turkey and carrots. Heat over medium heat until carrots are tender crisp. Add green beans. Continue to heat for 5 more minutes. Top each bowl of soup with a portion of pasta and a good sprinkle of Romano cheese.

Home recipe


My son got his turkey smoked that he took recently during hunting season. I made some of it into this soup....AMAZING! I changed onion to green onions out of personal preference. It's very easy to make. I put all the ingredients into the crock pot after I sauteed (as directed in the recipe) and let it simmer. What a treat. Loved it! Will be making more!
