Summer Sausage Quesadillas with Thai Peanut Sauce

  • 6 flour tortillas (8 in.)
  • 2 C. Nueske's Summer Sausage, sliced thin (1/2 lb.)
  • 3 Tbsp. onion, chopped
  • 3/4 C. medium cheddar cheese, shredded
  • 6 Tbsp. roasted red peppers, cut into thin strips
  • 6 Tbsp. mild spicy Thai peanut sauce
  • 6 Tbsp. butter


On three of the tortillas, spread the Thai peanut sauce. Then layer with sausage, onion, peppers and cheese. Cover with the remaining tortillas. Melt one T. butter in large non-stick fry pan. Place one quesadilla in pan and heat until cheese begins to melt over medium low heat. Add 1 T. butter as you turn quesadilla over with large spatula to heat the other side until completely heated through and nicely browned. Repeat with remaining quesadillas. Serve hot. Cut each in half for individual servings or in 6- 8 pieces each for appetizers.

Surprisingly very tasty


I won't lie, I wasn't sure about the peanut sauce paired with cheese but it is actually quite good! I used all of these ingredients on whole grain tortillas and it turned out really great. Love it and would recommend this recipe!
