Thai-Style Smoked Chicken Salad

  • 1 lb. small new potatoes
  • 1 can (7 oz.) baby corn cobs, drained
  • 1 1/2 C. bean sprouts, drained
  • 3 scallions, sliced thin
  • 2 Nueske's Smoked Chicken Breasts, sliced thin
  • 1 Tbsp. lemon grass, chopped very fine
  • 3 Tbsp. fresh cilantro, chopped fine
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • Dressing
  • 6 Tbsp. sesame oil
  • 4 Tbsp. lime juice
  • 1 1/2 Tbsp. soy sauce
  • 2 Tbsp. fresh cilantro, chopped fine
  • 1 small red chili, seeded and finely chopped
  • Lime wedges and cilantro leaves, for garnish


Boil the potatoes 15 minutes or until tender. Rinse in cold water. Cut into wedges. Toss all ingredients together and set aside. Combine all dressing ingredients in a jar, cover and shake to mix. Layer a bowl with the potato mixture and then drizzle with dressing. Repeat in layers. Garnish with lime wedges and cilantro leaves.
