  • 1 C Nueske's Smoked Turkey, diced into ½-inch cubes
  • ½ large head iceberg lettuce, cored and cut into ½-inch pieces (about 4 C)
  • ¼ C each: Walnut pieces and raisins
  • 1 Granny Smith apple, cored, halved, diced into ½-inch cubes
  • 2/3 C red bell pepper, diced in ½-inch pieces
  • Dressing:
  • 3 Tbsp lemon juice
  • 3 Tbsp honey
  • 3 Tbsp distilled vinegar
  • Tbsp parsley (minced)
  • 3 Tbsp vegetable oil (canola oil)
  • 1 Tbsp Dijon-style mustard
  • 1/2 tsp salt
  • fresh ground pepper to taste


For salad: Combine turkey, lettuce, apple, walnuts, raisins and red pepper in 3-quart bowl. For dressing: Combine ingredients in small dish; pour over salad. Toss until well mixed. Let stand 10 minutes before serving.
