Wild Rice and Smoked Turkey Soup

  • 2 C Nueske's Smoked Turkey, diced into ½-inch cubes
  • 2 C wild rice, cooked
  • 4 C chicken broth
  • 2 C half & half
  • 1 C carrots, diced
  • 1 C celery, diced
  • ¾ C onion, chopped
  • ½ C butter
  • ½ C flour
  • 1 tsp parsley flakes, dried
  • ½ tsp salt
  • ¼ tsp pepper


In heavy sauce pan, saute onion, celery and carrots in butter until onion is transparent. Reduce heat; blend in flour and cook until bubbly. Gradually add broth, stirring constantly. Bring to boil; boil for 1 minute. Reduce heat; add wild rice, half & half, smoked turkey, parsley, salt and pepper. Simmer for 20 minutes.

The smoked turkey was great, a bit salty, but I don’t use much sodium so I may be extra sensitive to the taste. I made the wild rice soup. The cook time is way short of how long I had to simmer mine. An hour and a half.
