Crust:
1 prepared 9” or 10” pastry shell pie crust, purchased or homemade (recipe not included)
Filling:
8 oz. Nueske’s Applewood Smoked Bacon, fully cooked and drained, cut into 1” pieces
3 Large Eggs
1 ½ C. Heavy Cream
1 C. Shredded Sharp Cheddar or White Cheddar Cheese
½ C. Red Bell Pepper, diced into ½” pieces
2 Tbsp. Chopped Chives
2 Tbsp. Chopped Parsley
½ tsp. Freshly Ground Black Pepper
Preheat oven to 350 degrees.
Pastry shell pie crust should be cooked according to packaging directions or homemade recipe instructions, before filling.
In a mixing bowl, whisk together eggs, heavy cream, black pepper, and parsley. Transfer cooked bacon pieces, diced pepper pieces and cheese into bottom of pastry shell pie crust. Carefully pour custard mixture over all and sprinkle top with chives.
Bake quiche 30-35 minutes or until the custard filling is set. Insert a small knife into center of custard filling and if clean upon removal, the quiche is done. Cool 5 minutes and serve.
