Bacon & Caramelized Onion Potato Salad

  • 2 Tbsp olive oil
  • 2 Cups red onion, diced
  • 1/4 Cup brown sugar
  • 6 potatoes, cubed
  • 1/2 Cup fresh chives, snipped (reserving 1Tbsp for garnish)
  • 12 slices Nueske's Smoked Bacon, diced and fried medium crisp (reserve 3 Tbsp for garnish)
  • 1 Cup mayonnaise
  • 1 Tbsp Dijon mustard
  • Juice of 1 lemon
  • 2 Tbsp sour cream


  1. Sauté onion in oil over medium low heat for about 5 minutes.
  2. Add brown sugar and continue to cook an additional 5 minutes.
  3. Meanwhile, boil potatoes until just tender, approximately 10 minutes. Drain and cool slightly.
  4. Combine the onions, potatoes, chives, and all but 3 Tbsp. of the bacon.
  5. Whisk together the mayonnaise, mustard, lemon juice and sour cream.
  6. Pour mayonnaise mixture over potatoes.
  7. Toss together. Sprinkle with remaining fried bacon.
  8. Garnish with reserved chives.
