Ingredients
- 12 Slices Nueske's Applewood Smoked Bacon
- 8 Thick Slices (1-inch) Brioche Bread
- 3 Large Eggs
- 1 Cup Milk
- 2 Tbsp. Sugar
- 1 Pinch Salt
- Vegetable Oil
- 2 Peeled & Sliced Bananas
- 1/2 Cup Peanut Butter (Warmed in Microwave for a few seconds)
- Maple Syrup
Method
- In a shallow vessel, whisk together eggs, milk, sugar and salt until mixture looks like custard.
- Dip sliced brioche into egg mixture coating both sides and transfer to a tray. Allow bread to rest and fully soak in custard for 10 minutes prior to frying.
- Place a large non-stick skillet over medium heat and add a few tablespoons of oil to pan.
- Once oil is hot, add a few slices of brioche to the pan and cook until golden brown on each side, about 1 to 3 minutes each side. Remove from pan and repeat with remaining slices.
- To serve, arrange 2 pieces of brioche on each plate. Drizzle peanut butter over toast and arrange banana slices amongst each stack of brioche. Top with bacon slices and serve with maple syrup if desired.
