Braised Smoked Slab Bacon

A recipe that yields a sweetly succulent and smoky braised slab bacon that is superb for dicing and using in recipes calling for braised bacon.

Ingredients

  • 2 Slabs Nueske’s Applewood or Wild Cherrywood Smoked Slab Bacon
  • 1 Quart Apple Cider
  • 1 Roasting Pan
  • Aluminum Foil

Method

  1. Preheat oven to 375°F.
  2. Place your pieces or piece of smoked slab bacon in the roasting pan. Add the apple cider to the roasting pan. Cover the roasting pan with aluminum foil and place it in your preheated oven.
  3. Braise for 1 hour and 45 minutes. Remove carefully from oven and uncover. Place the piece or pieces of braised slab on a plate or in another container to cool. Cover the plate or container and place it in the refrigerator to allow further chilling.
  4. Once chilled, the braised bacon is ready to be used in your recipes. We have a few favorites: BLT with Braised Cherrywood Smoked Bacon & Fried Green Tomato and Romaine Hearts with Braised Cherrywood Smoked Bacon and Chimichurri.
  5. Note: The remaining braising liquid you have at the end of this process adds big flavor to braised greens such as Collard and Chard.
